Buy Local Challenge: Cookin’ with Carol

Why is it important to buy/eat locally grown foods? Most of us know the answers to this question, but for those that don’t, let’s review the basics:

  • Buying local is good for you, good for the local economy, and good for the planet!
  • Buying from local farms helps you get products that are fresher, and have traveled much shorter distances overall from farm to fork.
  • When you buy local you are supporting independent family farms which helps strengthen the (local) economy.

ESLC Agricultural Specialist Carol Bean, with the assistance of summer intern Michelle, celebrated this fun & tasty week by creating a daily snack using locally-sourced ingredients.
